  1. Chinese Oven-Baked Tamarind Shrimp

    1 lb. shrimp in shells
    3 Tbsp. tamarind paste
    large dash sugar (omit if using sweet sherry)
    large dash salt
    large dash chili powder

    Combine tamarind paste with 1/4 cup of water. Add sugar, salt, and
    chili powder. Marinate shrimp in shells for at least one hour (even
    overnight) turning now and then to distribute marinade.

    Preheat oven to 325 degrees F.
    Place shrimp and marinade on shallow oven-proof tray.

    Bake for around 15 minutes.
