  1. So Margie was planning to make stuffing with the chcikecn today, and
we used up all the celery last night for our special Polish vegetable
    soup(family tradition).
Our lack of planning has resulted in us being out of celery.
The grocers are closed today. I'm wondering if we can use celery seed
or celery salt as a flavor substitute?

Celery salt on apple slices can be a good substitute.

Celery salt is a blend of ground celery seed and ground salt... be
cautious with it's use or you'll be asking how to remove the saltiness.
I'd not use whole celery seed in stuffing or some of your guests will
hate you for ruining their dinner because your stinkin' little seeds
fercockted up their dentures. A small amount of celery salt is fine
with chicken regardless, but I'd not use more than a pinch as celery
salt is potent and tastes nothing like fresh celery. I think rather
than celery seed to replace the fresh celery I'd use some other
aromatic vegetable (bell pepper comes to mind) with fresh herbs
(parsley stems is good, also emulates the crunch of celery, and a small
bit of dillweed). Use a 1/8 cup each of finely minced green bell
pepper and fresh parsley, and mince a small sprig of dillweed or use a
1/4 tsp dried, and you may never want the celery again. I think for
chicken curly leaf parsley works better than flat leaf, but use
whichever you have... now don't tell me you did your holiday meal
shopping and didn't pick up a bunch of parsley... and a fresh lemon...
if you don't buy anything else those two are a must, never leave the
stupidmarket without them. Fresh lemon never goes to waste, I can't
think of an alcoholic beverage that can't benefit from fresh lemon... I
mean like after the third 2ni with olives a twist is a nice change of
pace... Boodles with a twist is my palate cleanser of choice... screw
that wussy dago lemon ice.... like who's gonna argue I don't have the
    freshest mouth...

  4. I too was worried about the potency of the celery salt
    We did get parsley

Parsley stems and a tiny bit of celery salt sounds liek agood bet
    Thanks

Margie thought of the apples too, but in our experience that makes the
stuffing too moist for our palate. We like a dry stuffing.

It won't be crunchy but maybe the seed will offer flavor. The only time I
use celery salt is in Bloody Marys.

    Seed, yes. Salt, no.

Whole celery seed is too crunchy. Whole seeds are okay for flavoring
if you can remove them, like with stock. But for cooking where seeds
can't be removed it's best to use ground celery seed. I truly detest
when idjits put whole celery seeds in potato salad. Tthose friggin'
little [censored] get stuck betweeen my teeth... I can only imagine how
much worse for those with dentures. If ever you want to use celery
seed that can't be easily removed use ground. Plain ground celery seed
is readily available, and it's cheap, about the least expensive item in
    the spice section.

Probably. It would be much easier to say for sure if you posted the
recipe, but odds are, omitting the celery or using celery seed should be
    okay for a stuffing recipe.

Where are you at? Our local supermarket is open today. It varies from
year to year (we have lived here for 30 years). The local drugstore is
    open.

The local Chinese take out is open, I'm sure they will provide some
    celery.

    darn good.
