  1. I made some roast beef has the other night. Breakfast this morning is roast
beef hash, scrambled eggbeaters with a bit of shallot and a toasted bagel.
To drink I have some V8 juice and skim milk.

Michael <- forgot to add coffee to the list

    My Roast Beef Hash:

Put left over roast, potatoes and onions through the meat grinder once.
Heat oil in a pan and make little pancakes out of the ground meat mixture.
Do not crowd pan. Cook until brown on both sides, about 5 minutes or so
total. Continue cooking in batches. Season with s&p if needed and dig in.

    Now THAT'S a righteous breakfast!

    Top 'o the mornin', Michael...

It's bitter cold and snowy here in Chi - town so I had oatmeal, buttered
toast, and LOTS of hot coffee...

At the moment I am preparing chicken and sausage gumbo for tomorrow, now
that's it cold my pals and I enjoy making comfort food for the weekend.
Last weekend a friend made meatloaf with all the trimmings and brought it
over, it was DEE - LISH...

The gumbo I'll serve with rice, cornbread, and a salad...

How is that Krazy Kat (Hoot?) doing, has the feline settled down yet...???

Your Gumbo sounds wonderful. I really miss my friend Karen's gumbo. She
moved to Manhattan with her job. Man could she cook with a Cajun flair.
NY is lucky to have her. It's warming up here today. I have to leave in a
couple of hours to go south. We have had a mean cold streak here. Last
Sunday I made a pork roast and a chuck roast to make TV dinners with.
Well, it really didn't last long enough 😉 Barb Schaller was right.
Anyway, your Gumbo sounds really, really good.

Hoot is a barbarian these days. She stomps through the house hissing and
screaming even when the other cats are not visible. I have found the
rolled up newspaper swapped on a table calms her down a bit. I will say
this; she will now come into the den when Ramsey is nesting on the sofa.
Bart is completely happy in the basement. Hoot will not go down there
unless she thinks she sees a mouse. Hoot is the killer cat from Hell. She
mangled Steven's hand a few weeks ago. He had to get shots. He still has
the scars. Naturally it was his own fault and he didn't get mad but...
OUCH! I've been there and done it many times.
