  1. Onion Sandwich Canapes

    Serves 3\5

    2 Tbsp mayonnaise
    2 Tbsp cheddar cheese, finely grated
    salt and pepper
    1 Tbsp chives, sliced
    1/2 cup sweet (Vadalia) onion, finely diced
    4-5 slices rye bread
    4-5 slices pumpernickle bread
    3 Tbsp mayonnaise
    3-4 Tbsp parsley, finely chopped

    Mix the cheese, mayonnaise, salt, pepper, chives and onion in a small
    bowl. Set aside. Using a bisquit cutter or a small glass, cut small rounds
    from the rye and pumpernickle breads. Place a small mound of the onion mix
    on each round of the pumpernickle bread, top with a round of rye bread and
    press down gently to secure the tops. Smear the 3 tablespoons of
    mayonnaise on a cutting board in a 1 inch wide line. Next to that, run a
    line of the chopped parsley. Roll the sandwiches in the mayonnaise, then
    roll them in the parlsey. Plate them up, garnish the plate and serve.

    HINTS:
    Any variety of sweet onion will work in this recipe. Chopped chives are
    also a fine substitute for the chopped parsley that you roll the mini
    sandwiches in.
