help with old recipe

  1. I was recently given a folder full of recipes that belonged to my
    mother-in-law. She passed away more than 15 years ago (long before I
    was in the family)

    I have one recipe that is written on an envelope that has no name....

    Can anyone identify this? Looks like a fruit cake to me sort of...it
    actually looks rather scary.

    1 Pkg Dates
    1 med sized bottle marchainone cherries (think that is misspelled lol)
    3 pounds nuts (1 English walnuts, 2 pecans)

    1 pound brown sugar
    10 eggs
    1 pound butter

    *combine the sugar, eggs, butter in mixer

    1/2 tsp cinnamon
    2 tsp each
    nutmeg
    allspice
    cloves
    1 tsp each
    vanilla
    lemon
    almond
    1 med jar strawberry preserves
    1 med jar orange marmalade
    1 box white raisins
    1 pound preserved pineapple
    1 pound preserved cherries
    1/4 pounds citran ?
    1/4 pound lemon pine ????
    1/4 pound orange pine??
    1 can crushed pineapple
    4 cups self rising flour

    Pour mixture in tube pan that has been greased and lined with was paper
    and greased again. Start baking at 225 for 1 hour and then increase
    heat to 350. Bake for about 3-3 1/2 hours.

    Makes about 12 pounds..

    Any ideas? Does this sound good to anyone?? There is some scary stuff
    in this folder - I am just really curious as to what on earth lemon pine
    is - at first I though lemon zest - but a 1/4 pound would be a LOT of zest.

    That would be Lemon Peel and Orange Peel. It does sound like a recipe
    for a very rich fruit cake.

    You might like this one. It is heavy on fruit and ingredients that will
    keep it nicely moist. You can easily cut the recipe down if you want to
    make less the first time around.

    Since they come right after "citran" (citron), I think the "pines" are
    candied fruit. Yes, it sounds like fruitcake and no, it doesn't sound
    good to me.

    The only fruitcake I like is one I have made with candied pineapple,
    maraschino cherries, and pecans in a light batter (and I don't like it
    well enough to make it often!)

    Yes Roberta there is a Santa Claus... oops, wrong story.

    It's Fruitcake in all it's glory. Maraschino cherries (sp? I think). Your
    Orange and Lemon "pine" should be candied peel (rind). Your "citran" would
    be be citron; again, it's candied citrus peel.

    I'm not a big fruitcake eater but it looks edible. Personally, I'd make it
    in mini-loaf pans. They'd cook faster and when you give them as gifts...
    those that don't like it won't feel as guilty thowing a mini-loaf away as
    they would a 3-pounder! LOL

    I wouldn't mind trying a recipe like that myself but I detest nuts in
    most sweet things. What are people opinions about leaving out the
    nuts?

    Would I have to subsitute/ increase amounts of other ingredients or
    could I get away with just a smaller fruitcake while keeping the rest
    of the ingredients the same?
