This one was my mom's--and in spite of what you always heard, her
fruitcakes always seemed to get eaten, rather quickly!!
Applesauce Fruitcake
2 cups sugar
1 cup shortening
3 cups unsweetened applesauce
4 tsp. cinnamon
1 tsp. cloves
1 tsp. nutmeg
4 tsp. allspice
1 Tbsp jam (any fruit)
4 cups flour
1/2 tsp. salt
2 tsp. soda
2 eggs
1/2 lb. candied pineapple
1/2 lb. candied cherries
1 lb. candied mixed fruits
1 lb. chopped dates
1 cup raisins
2 cups chopped walnuts
Combine all ingredients except fruits and nuts and mix until smooth.
Stir in fruits and nuts. Line the bottom of two loaf pans or one
tube pan with well-greased and floured double-thickness brown paper
or parchment. Bake at 300 degrees for one hour (test for doneness
with a toothpick).
