  1. Shortly I'll be doing my Xmas baking with my Daughter. Every year we do the
    usual stuff,but try to add something new.

    I need help in deciding between these two bar recipes as to which one we
    should add to the make list.

    @@@@@ Now You're Cooking! Export Format

    Oatmeal Carmelitas

    none

    2 cups flour
    2 cups quick cooking rolled oats
    1 1/2 cups firmly packed brown sugar
    1 tsp baking soda
    1/4 tsp salt
    1 cup butter, melted
    14 oz pkg. light caramels, unwrapped
    1/3 cup light cream
    2 cups semisweet chocolate chips
    1/2 cup chopped walnuts

    Preheat oven to 350 degrees.

    Grease 13x9-inch pan and set aside.

    In large bowl, combine flour, oats, sugar, soda and salt and blend. Add
    melted butter and mix until crumbly.

    Reserve half of crumb mixture (about 3 cups) for topping.

    Press remaining crumb mixture in bottom of greased pan.

    In a small bowl, combine caramels and cream. Heat in microwave oven for
    4-6 minutes on 50% power, stirring twice during cooking, until caramels are
    melted and mixture is smooth.

    Crisp Chocolate Caramel Bars

    none

    1- 1/4 cups flour
    1/2 cup powdered sugar
    1/2 cup butter, chilled
    14 oz. pkg. caramels, unwrapped
    1/3 cup milk
    1/4 cup butter
    1 cup semisweet chocolate chips
    1 cup milk chocolate chips
    1/4 cup butter
    1-3/4 cups crisp rice cereal

    Preheat oven to 350 degrees.

    Combine flour and powdered sugar in large bowl and mix well.
    Cut in 1/2 cup chilled butter until particles are fine and butter is well
    distributed.

    Press into a 13x9' pan and bake at 350 degrees for 10-12 minutes until
    light golden brown.

    In heavy skillet, melt caramels, milk, and 1/4 cup butter over low heat,
    stirring frequently until melted and smooth. Spread over baked crust.

    In another saucepan, melt chocolate chips and 1/4 cup butter, stirring
    until smooth. Stir in cereal. Drop this mixture by spoonfuls over caramel
    and carefully spread to cover. Cool completely, then cut into squares. 48
    bars

    Mmm, seems to me that a sample pan of both types of cookie would be the only
    way to tell for sure which is better. That would also help you figure out
    which keeps better, cuts more neatly, freezes better, etc. (assuming that
    you were able to have leftovers!).

    I would love to do that testing for you, but I'm so afraid that I would eat
    both batches myself before they had a chance to cool off.

    Yes Barb posted about one of them earlier today...but with no recipe 🙁

    I was leaning toward the rice crispy one...because the Aussie's used to
    post about a chocolate and rice bubble thingy they made. Which is somewhat
    similar AFAIK. So far it seems people like both and I might need to decide
    myself.

    Since the recipes use almost the same ingredients why don't you make a
    half recipe of each one and make each one in a 8x8 pan.

    The chocolate and rice bubble thingy we mentioned was probably chocolate
    crackles. Your chocolate caramel rice crispy recipe sounds a lot nicer!
    I'm not a huge chocolate crackle fan - usually only eat one. They use
    cocoa powder, icing sugar, coconut, rice bubbles all held together with
    melted copha (coconut oil), and set in patty cake papers.

    The crisp chocolate caramel bars sound like caramel slice ( a popular
    treat consisting of a shortbready base, caramel filling and chocolate
    topping) with rice bubbles added to the chocolate. Yum. I think I'll have
    to try that one - thanks for posting that recipe.

    A slice that combines chocolate, caramel and rice bubbles that is very
    yummy and requires minimal effort is Mars Bar Slice. (For those in the
    US, please note that apparently a Mars Bar every where else in the world
    is equivalent to a Milky Way bar in the US - so this would be a Milky Way
    slice <g>😉.

    4 Mars Bars
    115g butter
    4 cups (250ml cups) Rice Bubbles

    Melt Mars Bars and butter together. Mix in Rice Bubbles and pour into
    greased baking tray. Let set in the refrigerator.

    Some versions then pour melted chocolate over the top of this and allow
    to set.
