This summer, we had a brainstorming session on how to spice up our dessert menu here at the Feed Bag. We decided to offer seafood desserts. Of the three we created, only one has been popular, our Mint Shrimp. It is also the simplest one to prepare.
Marinate 4 shrimps in Creme De Menthe for 3 hours. Place the shrimps in a chilled dessert glass and sprinkle them with powdered sugar. Add a dollop of whipped cream. Top with a sprinkling of finely diced pimento. Garnish with a sprig of mint.
This dessert retails for $4.99 and has, to our surprise, surpassed in sales more traditional desserts like chocolate cake and lemon meringue pie.

On first look it sounds like something I wouldn't eat however it would be rather cheap & easy to duplicate if you happen to have a bag of frozen shrimp & some cream de menthe on hand. I think I'll stick to shrimp contail or coconut shrimp 🙂
