  1. Invite your mother in law over for this sumptuous three course
    delight.

    Sauerkraut Salad

    1 1-lb can sauerkraut
    1 green pepper, chopped fine
    1 small onion, chopped fine
    3 stalks celery, chopped fine
    1 cup chili sauce
    1/3 cup brown sugar
    1 tsp paprika
    3 T lemon juice

    Drain sauerkraut and place in bowl. Toss in green pepper, onion, and
    celery. Set aside. Blend chili sauce, brown sugar, paprika, and
    lemon juice. Pour over salad mixture and toss well.

    Company Casserole

    1 4 1/2-oz can shrimp
    1 6 1/2-oz can tuna fish
    1 7 1/2-oz can crab meat
    2 3-oz cans chow mein noodles
    2 10 1/2-oz cans cream of mushroom soup
    1 1/3 cups water
    2 cups celery, chopped
    1 cup cashew nuts

    Devein shrimp, if needed. Pour hot water over all seafood and drain.
    (Empty the contents of the cans into a sieve and pour hot water over
    all.) This cleans off any oil from the fish.

    Combine all ingredients. Spoon into a large casserole. A few of the
    chow mein noodles may be sprinkled on top. Bake at 350 degrees for 30
    minutes.

    Glorified Rice

    2 cups cooked rice, cooled to room temperature
    2 T sugar
    dash of salt
    1 13-oz can crushed pineapple
    16 marshmallows, halved
    1 cup whipping cream, whipped

    Mix together the rice, sugar, salt, pineapple and marshmallows. Fold
    in the whipped cream and chill.

    Beverage suggestions:

    Boilermakers (Schlitz and Ancient Age)
    Grape Kool-Aid

    This wouldn't be too bad if you substituted bagged kraut for the
    canned. Even then, I'd probaby be tempted to cook it with a little
    bacon, or maybe even a few pork ribs. Oops, just notices the amount of
    brown sugar. Cooking the kraut will make it a bit milder, so I'd reduce
    the amount of brown sugar to a tablespoon or two. Flavor with a bit of
    caraway.

    1.5 Cups of water.
    1 Tablespoon of butter
    1 pinch of salt (maybe a bit more if butter is unsalted)
    1 cinnamon stick
    4 green cardamom pods

    Rinse rice three times. Break up cinamon into three or four pieces.
    Crack cardamom pods. Add all ingredients to small pot and bring to
    light boil. Boil until water level is just below the rice level. Very
    carefully stir just a bit if needed to distribute butter and spices.
    Reduce heat to low and cover for 15 minutes. Remove cover and continue
    for 5 more minutes. Remove from heat, and fluff with a fork.

    You may also add shredded mango, shredded coconut, or peas.

    always made it (and I still bear deep, psychological scars).

    I like your recipe better, but Jimmy's is technically more correct.
    "Glorified Rice" is a rice dessert made with little marshmallows,
    crushed pineapple, etc. I'm surprised his recipe called for real
    whipped cream rather than Cool Whip or Dream Whip. The recipe is
    available in just about any church cookbook; here's one that's more
    typical of the genre (notice the excessive use of brand name products):

    Glorified Rice

    1 cup MINUTE White Rice, uncooked
    1 can (16 oz.) fruit cocktail, drained
    1 can (8-1/4 oz.) crushed pineapple, drained
    1 cup JET-PUFFED Miniature Marshmallows
    1 cup thawed COOL WHIP Whipped Topping

    Prepare rice as directed on package. Cool.

    Place rice in large bowl. Add fruit and marshmallows; mix lightly.
    Gently stir in whipped topping; cover.

    Refrigerate several hours or until chilled.

    But, but, but I can add more mango, and whip up a coconut cream
    topping. I swear ! I'll even add bright red jarred cherries... Or
    sliced Kumquats.

    Ok, I've seen a few of the church cookbooks, but even they have a few
    good recipes in them. Why doesn't Jimmy boy ever post one of the good
    ones ?

    I've had sauerkraut salad before and it was delicious. I don't know if the
    recipe was the same or not. But then, I like kraut.
