REC: Broccoli Casserole

  1. After looking at the jabs at Tommy Tango's recipes, I remembered a
    Tommy Tango-type recipe of my own that is actually very good. And if
    you tell anyone you got it from me, I'll deny it and I'll come to your
    house and shoot your dog <veg>

    @@@@@ Now You're Cooking! Export Format

    Broccoli Casserole

    vegetables

    1 pound broccoli
    2 cans cream of mushroom soup
    1 8 oz. sour cream
    1 5 oz jar Kraft sharp cheddar cheese
    1 onion; finely chopped
    1/2 stick Butter
    breadcrumbs

    Steam broccoli in for 3 mins. Put into a 9 x 13" dish. Heat remaining
    ingredients over medium-low heat until smooth. Pour over broccoli and
    dust with breadcrumbs. (May be prepared one day ahead and
    refrigerated; dust with breadcrumbs before baking. Add 15 mins. to the
    bake time.)

    Bake at 350° for 30 mins.

    I would do much the same thing except substitute half & half and grated
    parmesan for the mushroom soup, sour cream and cheddar cheese and call
    it "Broccoli Divan".

    I found the recipe years ago and it, unfortunately, got me hooked on the
    American commercial product 'half & half'.

    Even the Campbell's "Roasted Garlic" mushroom soup? I cheat with it
    when i cook for a particular person who actually prefers it to my more
    'Auguste' sauces a l'Escoffier.

    p.s. i guess i should ask about your appreciation of a home made cream
    of mushroom soup, muschroom bisque? not something taken out of a can.
    But i like mushrooms, though "Sheldon" seems not to, especially with
    fish.

  11. Ok, here's my niece's broccoli cassserole recipe and it's always a hit
    at family gatherings.

    WARNING! It does contain TWO cans of Campbell soup and other 'quickie'
    stuff. If anyone is going to get their tail over their back about
    this, just pass on by.

    Broccoli Rice Casserole

    2 - 10 oz. packages of frozen chopped broccoli, thawed
    1 can cream of chicken soup
    1 can cream of mushroom soup
    ½ cup melted butter or margarine
    1 cup instant rice
    1 cup mild cheddar cheese

    Mix all ingredients together and spread into a 9x13 glass baking dish
    and bake @ 325° for 34-60 minutes.

    Well, I love it but I make my own as a rule. I've got cans of it in the
    pantry and I'll use them in a pinch. The best use for canned cream of
    mushroom soup, IMO, is to use it as an emergency sauce or emergency gravy.

    I do not care for canned soup but an elderly relative i grocery shop for
    prefers it. Recently i got her a can of roasted garlic Campbell's soup
    which she prefers to ordinary Campbell's mushroom soup.

    I do not like olive oil, but, as a rule i do not question another person
    intelligence just because of their culinary preferences, i suppose
    sheldon is the exception to the rule.---

    Well, as i mentioned i just do not like the taste of olive oil, but i
    have lots of fish recipes, a few of which i have even made, that call
    for both cheese and mushroom with the fish, and very good they are, a
    coulibiac or a kedgeree are quite good IMO.
