  1. Anyone ever hear of it? Anyone have an opinion on it?

Yes Roger. Any opinion will do. :-)

As long as you're not gluten intolerant, it's okay. Texture very much
like chicken breast meat. A bit sweet.

Cool. I guess I'm trying vainly to find the holy grail of low-carb
vegetarian food (for my wife). I thought black soybeans were it but
apparently some don't think so... :-(

I like black soybeans; I use them in chili, and I make LC 3 hour baked
beans with them. They pass my substitute hating, Irish, carb eating
husband's taste test. :-) You just have to try them for yourself. I
also make a cold salad with them, substituing them for black beans. They
work fine mashed in LC enchiladas, refried, etc.

You can try marinating and grilling tempeh, too. Thing is, my child
tried vegetarianism for a while (low carbs) and felt weak and ill even
with 100 grams of protein per day that included all the above, plus eggs
and dairy and whey peptide protein shakes. Each time this has been
attempted, wellness returned upon resuming eating animal protein.

    Good luck.

Hmmm. Well then I hope someone comes up w/ a whipped, chocolate version.
It's been far too long since I've had an opportunity to say, "your mousse
    is is clearly seitan".
