    8 oz. can tomato sauce
    1/2 tsp. dried oregano
    1/4 tsp. dried poultry seasoning
    pinch or two of pepper
    1 clove garlic, minced
    1/3 c. "Italian" breadcrumbs
    1/2 c. fresh shredded mozzarella
    1/4 c. fresh parsley, chopped

    Combine broth, sauce and oregano and set aside. Mix the turkey with
    parsley, poultry seasoning and pepper. Dived into 4 oval patties. Sprinkle
    breadcrumbs on waxed paper and press the patties into crumbs to coat
    lightly. Place patties in a shallow baking dish. Bakt at 450F for 10
    minutes; drain the pan. Turn the patties over and spoon the sauce mix
    evenly over. Bake 10 minutes more until the sauce is hot. Sprinkle fresh
    mozzarella over the top and let sit until the cheese melts.

    We switched to ground turkey when the BSE thing hit too close to home.
    At first the switch was a little weird - now we both love ground turkey
    and probably will never go back. I have fed it to numerous guests in
    pasta sauce and they always remark about how good it is but don't know
    it is turkey until I tell them. I also won a chili contest once with
    ground turkey. 🙂

    Everything i used to use ground beef for, meat loaf with an admixture of
    a local porc sausage is good. I occasionally make a moussaka with it.
    Stuffed peppers or onions, taking a cue from a local faux English pub i
    make a burger with it and serve it on artichoke bread i get from the
    pub, folding into the meat a walnut sized piece of blue cheese. Stir fy
    with veggies and serve over rice, maranara sauce for pasta with turkey
    meat balls. I find adding about 1/4 of a pound of oat bran to 1 pound
    of ground turkey to be very tasty, especially when making Swedish
    meatballs.

    I'll give this a go. Never used ground turkey before. Two simple queries on
    this though, Jill.

    1. What is "poultry seasoning"? - obviously a mix of dried herbs, but which?
    2. "Italian breadcrumbs"? Specially flown in from Italy ;-) Which bread?
