You wouldn't see any bubbles. You don't see bubbles in bottled soft drinks do you? You don't get bubbles unless there's something in the mix that causes the carbon dioxide to be released. Ice cubes and salt help create bubbles in soft drinks and beer because they give something for the bubbles to cling to. Agitation also creates bubbles. If you really want bubbles in your jello why don't you simply whip it with an electric mixer and then use a quick set method to make it jell before the bubbles dissipate.

Lisa, we made jello shooters for DD's wedding using club soda instead of ginger ale. It worked well.
