Cranberry Chicken

  1. Tonight I'm going to grill whole chickens thanks to Dimitri's post ๐Ÿ˜‰ I
    also have a ton of frozen cranberries. I'm going to make muffins but I
    came across this crock pot recipe. I seldom use the crockpot for cooking a
    main dish but this looks pretty tasty. I found it on Google and I am not
    affiliated with the site. When I make it, I'll report back.

    Also if I don't burn the chickens tonight, I'll post pics in ABF.

    Cranberry Chicken

    Crystal Miller

    1 small onion, sliced thinly
    1 cup fresh or frozen cranberries, if frozen do not thaw
    2 1/2 lbs. boneless, skinless chicken thighs
    1/4 cup fruit sweetened catsup
    2 T Sucanat or brown sugar
    1 t dry mustard
    2 t cider vinegar

    Place onion slices and cranberries in the bottom of your crockpot. Arrange
    chicken on top. In a small bowl mix together the catsup, Sucanat, dry
    mustard and vinegar. Pour this over the chicken. Cover and cook on low
    setting 6 to 7 hours or until the chicken is tender.

    To serve, lift the chicken out and set on serving platter (you can cover it
    and keep it warm in your oven on a warm setting) and mix 1ยฝT cornstarch
    with 2T cold water. Turn the crock pot to HIGH and add mixture. Cover and
    cook this for about 15 minutes more or until the sauce thickens. Season to
    taste with salt and pour this over the chicken.

    This tastes good with brown rice pilaf and a spinach salad.

    I'll be very interested in your results, Michael. I always have a bag of
    crans in the freezer -- think I have several now. Plus, I can park the
    crockpot on the porch and not heat up the house -- a definite plus in this
    heat.

    No kidding. The weather is fantastic. It's supposed to stay decent a few
    days. I've actually got all the windows open today and the air off.

    I bought a bunch of chickens at Dierbergs today. 50% off regular price.
    I'm grilling 2 4 1/2 pound birds as we speak. I'll do the cranberry
    chicken on Sunday. Meantime I'll be making a bunch of stock to freeze and
    I'll most likely have a ton of chicken salad made up. Ya' want lunch, you
    know where I live ๐Ÿ˜‰

    I'd brown the chicken a bit first...That would aid in any texture
    (soggy chicken) problems

    Hurry and make it.Please. I have some cranberries taking up room in my too
    small freezer.
