It seems that some of the fastest guys on earth are being fitted up in a manner that's a little half assed relative to what most amateurs insist on. Is it possible we've been overthinking this the whole time?

I've believed for some time now ( and have posted the contention on this forum) that "unless your knuckes drag the ground" most riders can start with the formulas in the LeMond book to determine the basics of bike fit : frame size & saddle height and then take that "stock" bike and tweak it with stem length, crank length, fore/aft saddle position, etc. etc .
When done most riders will be within a couple percent of the "ideal" fit if in fact there is an ideal.
