  1. Well, I did something wrong at every turn, I guess. Beat the batter too
    vigorously because I hadn't let the cream cheese warm up enough. Filled
    the pies too full. Used light sour cream because Safeway (where I
    almost never shop) was OUT of REGULAR sour cream, can you imagine?

    Anyway, they don't look great, but I'm hoping they'll be yummy tomorrow.
    Oh, wait, it's 2am. Today, then.

    Was that my recipe, Serene? Once or twice I've used cold cream cheese when
    I didn't have time. I used the food processor rather than a mixer. It
    worked okay, but not quite as well as when room temperature. I've never
    tried the light sour cream for the cheesecake, so can't predict the results
    on that. Chilling them well will make a difference in consistency. Hope
    it works out! Let us know...

    Yeah. I'll let you know how it turns out. I made two small cups of
    cheesecake from the leftover batter, and ate one warm. It had little
    lumps of unprocessed cream cheese in it. The texture was weird, but
    we'll see how it is tonight. I really have had very little luck with
    baking in my life. :-)

    I'm so sorry to hear that. I hope you'll give it another try. Batter
    should be room temperature and very smooth before filling the shells.

    Sorry, I haven't followed this thread much, so this may not be
    much help, but here is a sweet cheesecake recipe that I've used for
    years and it hasn't failed me yet:

    Very Best Cheesecake

    CRUST

    1-1/2 C. Graham Cracker crumbs (about 18 crackers)
    1/4 C. sugar
    5 T. melted butter or margarine

    FILLING

    2 (8 oz.) packages cream cheese, room temperature
    2 eggs
    1/2 C. sugar
    1 tsp. vanilla

    TOPPING

    1 C. sour cream
    1/4 C. sugar
    1 tsp. vanilla

    Preheat oven to 375° F. Mix crust ingredients well with fork; using
    a cold metal spoon, pat firmly into bottom and 1/3 of the way up the
    sides of an 8" springform pan. Set aside.

    Beat filling ingredients with rotary beater or electric mixer until
    satiny and pour into crust. Bake for 20 minutes, remove from oven and
    let cool for 15 minutes. Meanwhile, raise oven to 475° F. Blend
    topping ingredients and spread gently over cheese filling. Return cake
    to oven and bake 10 minutes longer. Cool in pan to room temperature,
    then cover tightly with foil and chill 10-12 hours before serving.

    Variations:

    Big Cheesecake: add one 8 oz. brick of cream cheese, one egg, and 1/4
    C. sugar to filling; increase first baking time to 25-30 minutes.

    Fruity Cheesecake: top cooled cheesecake with canned pie filling or
    sliced fresh fruit.

    Chocolate Chip Cheesecake: add one bag of mini chocolate chips to
    filling before baking.
