I don't think the Tour is somewhere you should be worrying about calorie restriction! You need to lose weight before the tour.
As to Ulrich, he had a team mate out front, Discovery were doing the work on the front and it was all downhill to the end.
Ideal time to start thinking about recovering for the next day if you ask me.

tour (or any grand tour) is abouat 7k. I don't think dieting is a big
issue there.
