a starter with mozzarella?

  1. Any nice recipes for a starter with mozzarella?
    I know some classics but I'd love to try something
    unusual maybe oriental.

    Wow. I'm not an oriental snob by any means, I hit the best local
    "Chinese Buffet" every few months as my diet allows. I mention
    that only because you just missed a grand blowhard fest about
    "real" Chinese food, the few bragging twits just went on endlessly
    about the fake stuff we non-snobs eat that is fake, pedestrian
    "Chinese", but I digress...

    Not trying to be a smartass, but in all of my years, I don't ever
    seeing any dishes involving cheese in these buffet spreads. Do
    orientals even -use- cheese of any type?

    Picking up on an idea from Yeff (Japan) how about breaded and fried
    mozzarella- think of it as mozzarella tempura :> You could experiment
    with the dipping sauce, use the same as for tempura. Or you could try
    breaded and fried tofu.

  5. Hmm...mozz cubes drizzled with sesame oil and sprinkled with sesame
    seeds? The nuttiness might be good with the mozz. Never tried it, lemme
    know if you do.

    Well, this is not oriental, but it is one of our very favorite starters
    using mozzarella.

    Caprese (Tomatoes & Mozzarella)

    Ingredients :

    4 medium tomatoes

    4 tablespoons olive oil

    8 fresh basil leaves

    Mozzarella

    Salt & pepper

    Recipe :

    Thinly slice tomatoes.

    Strain mozzarella and slice.

    Alternate tomatoes and mozzarella on a serving plate, then season - be
    generous with the olive oil!

    Add basil leaves to garnish and serve.

    No. In at least one Chinese dialect, cheese is called 'corpse of milk'.
    Asians tend, in general, to be much more lactose intolerant than the
    average person. (Another billion of them and they will be the average
    person <g>😉

    If you want I can give you two very simple italian recipe:
    1) The first is "Mozzarella alla Caprese" (Capri is a very small island in
    the Naples Gulf. The dish is very simple: you cut in slices a big tomato;
    then you cut in slices the mozzarella. Put in a dish one slice of tomato and
    then lay on a slice of mozzarella (the mozzarella doesn't cover all the
    slice of tomato but only for an a Half). When al the slices are arranged,
    you can season with oliv oil, pepper, salt and leaves of basil.
    2) Crouton with mozzarella and anchovy sauce (tipical roman dish).
    You need some slices of the yesterday bread (like french bread). If it is
    too old you can wet only a face of the slice in little milk.
    In a little roasting pan, lenghten the slice of bread and alternate with
    slices of mozzarella in kind they are slightly laid upon.
    For the sauce: in a little frying pan put enough butter. Light the fire and
    liquefy it togheter with little pieces of anchovy that will liquefy too.
    Spread this sauce on the slices of bread and mozzarella and put in oven till
    they roast.

  13. Ok guys, my turn. You are so stubborn. Mozzarella, tomato and basil...
    nice...

    but don't you think it's a bit boring?... I thought of something more funky.

    Try one of my recipes and then let me know how do you like it.

    It's maybe not that simple but certainly it's worth the hassle.

    Lets start with Ginger & Lemon grass Carrots:

    1L cider vinegar

    500g light brown sugar

    500ml water

    1 knob ginger \

    1 chilli } roughly chopped

    1 lemon grass /

    bring to the boil, then simmer and reduce by half;

    strain and pour over 5 large thinly sliced (use mandolin 1mm max) carrots.

    Leave it for 2-3 days.

    So we got the carrots. Lets work on the mozzarella now.

    What we need is more or less: juice of 6 limes, juice of 1 knob of ginger
    (grate it first

    and then squeeze all the juice), 300ml olive oil, 1/4cup of marinated
    Chinese black beans

    (don't worry I hate them too but we need them just for the flavour). Now
    just add 1/4 red

    and 1/4 green pepper diced and mix well. Pour over whole mozzarella balls.
    Leave it for

    minimum 1-2 hours (but not too long as mozzarella looses its softness this
    way and it's

    not what we want here) turning over if necessary so whole the cheese gets a
    dark skin.

    Serving suggestions:

    I use chicory and Thai basil basically mixed together with some of our
    pickled carrots, cut

    the mozzarella in 4 and garnish with our lime, black bean and pepper sauce.
    You are wellcome

    to try something else. Don't listen to your parents! Play with your food ;-)

    Now try it and convince yourself how nice mozzarella can taste.

    Not all cheese. Paneer or queso fresco will sit in a skillet and brown
    without melting. It's wonderful fried and if you play it right, can be
    used as a wrap to enclose other foods.

    I'll be damned! OK, so 99.9% of everthing I've ever wrapped in
    the kitchen has been in a soft tortilla. I will need to look into
    this possibility.

    Also Feta and Tofu must be put into milk (because defeta is very salted) or
    water (because Tofu comes brown) 🙂))
