That's called "extrapolating beyond the range of the data" and it's usually
a no-no. In biochemistry, almost nothing behaves in a strictly "more is
always better" or "less is always better" fashion when it comes to dosage.
The dose-response relationship over the entire range of possible dosages
may look completely different from the relationship over the restricted
range actually studied. Consider, for example, intake of calories. Over
part of the range of intake, increased intake results in better health.
Over another part of the range, increased intake is detrimental to health.
If you were to plot "level of health" against caloric intake, you'd see a
rise followed by a decline, with a peak in the middle. The same
relationship holds true for just about any nutrient, even water.
In particular, there's some evidence that when the concentration of
ascorbate is increased beyond a particular level, it starts acting as a
pro-oxidant rather than an anti-oxidant.
