  1. Black Bean & Corn Soup

    2 -15 oz. cans black beans, drained and rinsed
    1 -15 oz. can sweet yellow corn, drained and rinsed
    4 oz. can chopped green chillies with liquid
    8 oz. can diced tomatoes with liquid
    4 cups chicken stock
    water as needed
    1 small onion, minced
    3 cloves garlic, minced
    1 tsp. Penzey's Espazote herb blend
    ancho or chipotle chili powder (to taste)

    Chorizo? Do I want add chorizo? Hmmm, no I think I just want the beans and
    corn in this soup. Might add beer rather than water for any extra liquid
    needed. I'll figure out the exact seasonings later 🙂 I'll probably top
    this with grated Oaxaca cheese (I'm hooked on the stuff!) and lightly
    crisped corn tortilla strips.

    Any other suggestions?

    Squeeze a big wedge of fresh lime on each serving.

    Shrimp would go well too, better than greazy chorizo... but then omit
    the cheese.

    Ah yes! I meant to mention lime. Can't stand cilantro so I won't be adding
    that. I already ditched the idea of the chorizo (the stuff I have isn't
    greasy). I don't have shrimp but I still have some leftover crawfish tail
    meat I need to use up; might stir that in. We shall see.

    No not mushrooms....But roasted red bell peppers.... in strips. or raw
    if you don't have the time. Also...Go with the beer is my thoughts.

    I'm spining a chicken for lunch today and cold left overs for lunch
    tomorrow...thinking a kinda chicken ceasar salad for that.

    Doing the usual to the chicken...thin lime slices under the skin...I
    never get bored with that. Maybe minced garlic too. Depends on how my
    garlic supplies are, as Today is Canada Day and all stores around
    here are closed.

    Definitely the chipotle, and lime juice. This looks pretty similar to
    the tortilla soup I make, if you added some chicken and went heavy on
    the friedl tortilla strips. Enjoy!!

    hate the apparent flavor of beer in sauces, etc.

    To me, the end result doesn't taste like beer. To me, it just adds a
    subtle "something." I guess there's only one way to find out if you'd like
    it or not. If you don't, drop me a line and I'll send you my address. You
    can send the beans to me! 🙂

    I'm guessing it's like parsnip in chicken Stock....I hates
    parsnip...but require it used in chicken stock...it just adds that
    missing dimension to the flavour....I regret the years I spent making
    chicken stock without parsnip and I imagine (if I ate beans) I'd regret
    the time spent making them without beer.

    You can give me 100% assurance that if I make chicken stock with a
    {shudder} parsnip in it, I won't gag and throw up? I get queasy just
    thinking about those things. The "recipe" I got from a friend from a Twin
    Cities BBS includes parsnips. And I never make matzoh balls. Can't stand
    'em. I make my chicken soup with rice. Here's Molly's recipe (the dill
    weed makes all the difference!):

    ---------------------------------------------------------------------
    Okay, you will need:

    Two packages of Matzoh Ball Soup Mix (careful not to get the stuff
    that's just matzoh ball mix, without the soup mix in it)

    a little oil

    a couple eggs

    A chicken

    Celery

    Carrots

    parsnips

    Dill weed

    Salt and Pepper to taste

    Put the chicken in the pot and cover it with water (generous amounts,
    I never measure). Cook it! I usually de-skin the bird first to
    cut down on fat. After the bird is cooked, scoop it out and let
    it cool a bit, then take all the meat off the bones, throw the bones
    away and add the meat back to the pot. Then add the soup mixes from
    both boxes (really adds to the flavor!) and the carrots, parsnips
    and celery (as much as you want, cut however you want--I like it
    in big pieces). I like to add the tops of the celery with the leaves,
    too. Add dill weed, salt and pepper to taste, and cook a while longer.
    Prepare matzoh balls according to package directions--it's easy!
    Just drop them in and in 20 minutes they're ready to eat.

    This is enough soup for an army but it's so damn good I usually have
    no trouble finishing it.

    O.k., a marriage of flavors I can deal with. I'll give it a try. Do you
    use bacon or ham or anything like that in your beans? Onion? The usual
    suspects? No need for recipe details, I'm just trying to fill in the
    blanks. Hmmmm, I wonder how Corona would work for refried beans?

    Onions for sure. I honestly can't remember what else I put in there. If I
    know me, I probably used bay leaves, but that seems odd for pintos, doesn't
    it? I have no clue about Corona. Never tried it. But one thing I did
    find out for sure ... no light beer.

    the stock. Used only to spend it flavour to the broth...like the

    All bets are off if you use it in the actual soup.

    Penzey's is where mine came from. And I must say the soup was fantastic! I
    strayed from the "Southwest" theme a bit by adding 1/4 cup of pearl barley
    to thicken the soup. I used Ancho powder at first and then after it
    simmered a while spiced it up with a little Chipotle. This is not a soup
    for chili-heads but also not for those with a sensitive palate.

    I hate parsnips in soup or plain. BUT roasted! They are delicious!!
