  1. Is it possible to buy a 30 tooth cog to fit an Ultegra 9 speed
    cassette?
    If so, can I take a 12-27 cassette, add the 30 tooth cog, remove the
    12, ending up with a 13-30 cassette?

    You'll need a 13T endcog to replace the stock 13 with separate spacer
    (which can go between the 30 and the cassette).

    You can buy the cogs, with difficulty. Finding a loose 30t is
    difficult. I've used a 32 and it works great. I don't know if 13t
    cogs with the integral spacer are now avaialbe from Shimano USA. They
    used to not be. A 13t first cog from an 8sp cassette works ok too.

    Sheldon Brown sells the entire thing you are looking for.
