Dunno if the word "kind" refers to this poor "sole" in any way, but here
is one we like:
Chicken with oyster sauce and basil
You will knead:
1/4 cup oyster sauce
2 tablespoons fish sauce
1 tablespoon grated palm sugar
1 tablespoon olive oil
2-3 cloves of garlic, crushed
1 tablespoon grated fresh ginger
1-2 red chillies, seeded and finely chopped
4 spring onions, finely chopped
375g chicken breast fillets, cut into thin strips
250g broccoli, cut into florets
230g can water chestnuts, drained
230g can sliced bamboo shoots, rinsed
..... and this is where the basil comes in....
20 fresh basil leaves, shredded
What to do with all this stuff:
Sauce: Put 1/4 cup water in a small jug with the oyster sauce, fish
sauce and palm sugar. Mix well, put aside until kneaded...
Heat wok until very hot, add the oil and swirl around to coat the side.
Stir-fry the garlic, ginger, chilli and spring onion. Cook for 1 minute
over medium heat. Increase the heat to medium-high, add the chicken and
stir-fry for 2-3 minutes or until it is just cooked. Remove from the wok.
Reheat the wok and add the broccoli, water chestnuts and bamboo shoots.
Stir-fry for 2-3 minutes, tossing constantly. Add the sauce and bring to
the boil, tossing constantly. Return the chicken to the wok and toss
until it is heated through. Stir in the basil and serve.
(Very nice with rice or couscous)
You might have to increase the cooking times slightly... hope you have a
wok? 😉
