dinner tonight

  1. (oops, posted this to alt.cooking chat by mistake) my brain just isn't
    working........

    My husband has been in the hospital for almost 5 weeks & things don't look
    good. But it's father's day and also my daughter's birthday.
    So..........spent most of the morning preparing their favourite stuff which
    I'll take up to the hospital.

    By request (all)

    Chicken Kiev -
    Baked Potato
    Roasted Asparagus with garlic, rosemary & thyme (my herbs have never grown
    so well!)
    Cucumber & Red Onion in a mayonnaise, sour cream, vinegar dressing.

    and for dessert..............
    Lemon Meringue Pie - this is the first time ever I've made my own pastry.
    I'm not too sure about it, and won't try it 'cause I just don't like lemon
    meringue pie.

    So to all you people out there who still have father's here - celebrate and
    spoil them, you just never know when they are not going to be around.

    I'm so sorry to hear that, Elaine. I know what a week in the hospital
    feels like. I can't begin to imagine what you and your family are going
    through. My prayers are with you.

    Oops, sorry for the previously sent post sans message. I hope your DH feels
    much better after the wonderful meal you are taking him. These are indeed
    hard times for you. Perhaps there will be a turn around for you.

    Elane, I'm so sorry to hear about your husband. You have my prayers that his
    condition improves and that he's soon home with you again.

    You've prepared a delicious menu which should absolutely delight your
    daughter and will perhaps make your husband feel a bit better.

    asparagus and tomato salad

  9. We had some asparagus and tomatoes vinaigrette left from Sunday, so I
    topped some baby spinach with the leftovers, added a layer of chicken,
    then sprinkled on some feta cheese and almonds.
