    Nothing - it's washed, shredded, and put in the tub awaiting the customer
    and pita pocket. After that, when in the pita with the meat, they put on
    either nothing, or any one of a number of things depending on what you ask
    for, many are mayo based sauces (with added garlic, chile sauce, tomato
    sauce and chile sauce (usually that's what you get as 'American sauce'😉
    etc. - there's no one thing I'm afraid.

    Often the cabbage is dressed with that lemon dressing that also stands
    on the counter in squeezy bottles. Never heard the term 'American sauce'
    in a London kebab shop. The usual dressing in the kebab shops I bought
    from the most were sesame/tahini based rather than mayo based. MIght be
    different in other parts of the country.

    Our local (California, S.F. Bay area) place serves a yoghurt cucumber
    sauce that is excellent.

    Here's one version I have:

    1 cup plain yogurt
    1/2 large cucumber, peeled and thinly sliced
    2 teaspoons lemon juice
    1/8 teaspoon salt

    I like this with gyros but I'm sure there are many other recipes.

    Pretty much what i make but i peel, seed and squeeze out the water from
    the cucumbers and add a bit of mashed garlic.
