  1. He's doing pretty well. They predicted they would remove his staples
    yesterday but Mom and I both knew that wouldn't happen. He's still bleeding
    from one incision where the bypass was so they said another 10 days before
    they remove the staples and take it easy on the walking.

    Mom is getting tired of changing bedsheets and Dad is getting tired of using
    a cane. Well what the heck, he's almost 81 and you can't expect to bounce
    back like a rubber band. He's got a good appetite so that's a good thing.
    Mom made his favourite soup for dinner yesterday (recipe follows) and he
    chowed down. He also had SOS for breakfast (the Stouffers frozen chipped
    beef stuff).

    Dad's Navy Bean Soup

    1 lb. dried navy beans (small white beans), soaked per package directions
    2 smoked pork ham hocks, a large meaty cooked ham bone or 1 lb. sliced salt
    pork or thick bacon
    1 bay leaf
    1 clove garlic, chopped
    1 small onion, chopped
    1/2 tsp. pepper
    1/2 tsp. salt
    8 cups water

    Place the soaked beans in a stock pot. Cover well with cups water;sometimes
    I add a cup of chicken broth or stock instead of just water. Add bay leaf,
    garlic, onion and pork. (If using salt pork brown it lightly first and
    dice.) Bring to a boil. Reduce heat to low; cover and simmer about 3
    hours, stirring occasionally. Remove the meat from the bones and cut into
    bite-sized pieces. Add back to the soup. Add water if needed but the soup
    should not be thin. Serves 8 hungry people.

    Tell your dad our prayers and best wishes are with him - and you of
    course. That soup sounds good enough to have surgery for <G>.

    It's nice to have good news first thing in the morning. For a man of
    81, his recovery seems to come along just fine. I know, you and your
    parents want your Dad to be as good as new as quickly as possible, but
    if you think back to just before the surgery......

    I think he's doing well for 81!! Your poor Mom must be almost ready to
    qualify as a nurse by now! 🙂 Hope he feels better soon.
    DH is not too keen on soup, but this sounds really good. Will try it
    soon, as we are almost into winter here in SA.

    When I go to visit it's a disappointment if this soup isn't simmering on the
    stove. It's really tasty!

    have given them my recipe for potato-leek soup which they love 🙂
