    I did bring back some Betty Crocker Golden Corn mix and baked it last
    night. Not microwaveable so far as I could tell, but delicious,I'd love a
    clone recipe!

    Forget the mixes. Cornbread and corn muffins are easy as can be.

    1 c. cornmeal
    1 c. flour
    4 tsp. baking powder
    up to 1/4 c. sugar (I use 1 Tablespoon, don't like sweet cornbread)
    1/2 tsp. salt
    1 c. milk (I use non-fat buttermilk)
    1 egg
    1/4 c. oil or softened butter

    Preheat oven to 425F. Combine the dry ingredients, then stir in the egg and
    the milk. Beat by hand until mixture is combined (it will be a little
    lumpy). For muffins, spoon the batter into greased muffin tins about 3/4
    full. Bake for 15-18 minutes or until golden brown on top.
