Beer batter;

  1. Local supermarket had a good sale on sea scallops,bought five
    pounds.I want to try a beer batter on them,but as a couple that dosen't
    drink,we know little about beer.What type/brand of beer could we use?

    When I do my fish and chips, I like to use an English ale, such as
    Bass or John Courage. You wouldn't want to use a very dark beer, which
    would overwhelm the scallops. Or you could use a buttermilk batter
    that I use on vegetables, but ought to work on scallops.

    Vegetable Buttermilk Batter

    vegetables

    1 egg
    1 cup flour
    1 cup buttermilk
    1/2 teaspoon salt
    1/2 teaspoon baking soda

    Combine ingredients and dredge vegetable in mixture. Fry at 375F.

    Yield: 4 servings

    Cheap stuff. It doesn't really matter unless you're looking for a specific
    taste which, as nondrinkers, you probably aren't. Use the rest of the beer
    to simmer your brats before grilling. ;-)

    English style summer ale - light in colour, well hopped but with fresh,
    subtle, fruity hops, if you can uhhhmm, find that! ',;~}~

    Oh, and I'd use half and half wheat flour and corn flour too, a bit like a
    tempura batter.

    Here's my recipe for onion rings with a terrific beer batter - I
    generally use a beer I would drink, although I don't usually drink beer
    - Bud Light, the last time I made these:

    2 1/4 C. flour
    1 tsp. baking powder
    1/2 tsp. salt
    20-24 oz. room temperature beer
    1 large white onion

    Cut the rings, separate them and put them in ice water for at least 3
    hours (use ice cubes and water, and put the container in the fridge).

    Oil temp should be at least 375 - in my big electric frypan, 400 worked
    better because I cut the rings fairly thin.

    Drain the rings and shake them in a bag of flour until they're
    well-coated. Submerse in the beer batter and drop in the oil. Fry
    until light brown, turning once. Keep warm on a rack on a cookie sheet
    in the oven - salt just before serving.

    I freeze these in a vacuum bag - they stay separated and I can take
    several out at a time, put them in the toaster oven, and they're ready
    to eat in less than 5 minutes.

    I wasn't tell them to drink it; I was telling them to make batter from
    it. It does the job without costing a ton.

    Don't get me wrong, I love lager beers! But, those aren't lager beers...

    If one really isn't a beer drinker, and/or doesn't like the taste of
    any beer, Bud Light does a fine job in a fry batter. ;-)
