yummmmmm.....i could get addicted to mashed caluflower. not altogethera
bad thing, i guess.

I too fell in love with Ruby Tuesday's mashed cauliflower. This is a great
dish for diabetics (I'm one) who miss mashed potatoes. Here's a recipe I've
tried; it's supposed to be a Ruby Tuesday's clone. It's pretty darn close,
and it's good! Wish I knew the author so I could give credit where it's
due.

Mashed Cauliflower (Ruby Tuesday's clone)
1 head cauliflower, cut into florets
1 tablespoon corn starch
1/4 cup heavy cream (I used half and half)
1 teaspoon granulated sugar
3/4 teaspoon salt
1/4 teaspoon white pepper
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
Steam cauliflower florets over boiling water until tender (about 15
minutes). Drain. When the cauliflower has cooled a bit, put the florets in
a food processor. Puree the cauliflower on high speed until almost smooth.
Leave some very small pieces in the puree for texture. Pour the puree into
a medium saucepan. Dissolve the corn starch in 1/4 cup of cold water and add
to the cauliflower. Add the cream, salt, white pepper, garlic powder, and
onion powder to the cauliflower and stir. Cook over medium heat, stirring
often, for 5 to 10 minutes, or until mixture thickens. Makes about three
3/4-cup servings.
