Well, you *could* do it on a MTB but it'll be a lot harder work and
nowhere near as much fun.
I'd suggest a roadrace bike with a triple or an audax bike. I'd use
the former personally. You don't need to carry kit so don't go for the
extra weight of a touring bike.

3/4 pairs shorts
short sleved tops x2
base layers x2/3
arm warmers
leg warmers
long sleved top x1
windproof gilet (for the descents)
waterproof top (in case...)
some socks
Spares wise, if the bike is properly looked after, nothing much should
break, so I'd take:
In the car:
spare tyres (maybe two between the group?)
lots of spare tubes (don't patch tubes if you're doing long alpine descents)
track pump
some basic tools (full set of allen keys incuding the big ones, pedal spanners etc)
maybe a spare set of brake blocks?
spare cleats depending on your shoes (yes if you use look, no if you're using
metal MTB cleats)
On the bike:
Multitool
2x spare tubes
tyre levers
tyre boots are handy (Park do them) but no essential
pump
cash
