  1. I've always liked products with lecithin but have never gotten around to
    cooking with it. Here might be a good reason to try.

    Anyone have any easy recipies using it? I wonder how long it keeps. Every so
    often I buy a bottle of it, open it and think about it, put it away, and
    months later wonder if it's still good.

    What kind of nuts do you use, Queen?

    i actually like pumpkin seeds, sunflower seeds and sesame seeds the best
    (not all together, though!), but almonds or walnuts also make for a
    tasty milk. i made a batch with macadamia nuts once and it was yummy
    but very, very rich.

    donuts with chocolate frosting, Nabisco Fig Newtons. Various other
    semi-soft, semi-oily, not too sweet products seem to have it on the list.
    Some of them aren't sweets at all.

    It makes things sort of smooth and rich and soothing. They usually taste a
    little salty, but I'm not sure whether that comes from the lecithin.

    here is the bottom line:

    You can't cheat. Your body knows if you do. You can gain, lose, or
    maintain weight. It's up to you.

    Lecithin is an emulsifier. It helps hold together ingredients that
    might otherwise separate. It's good food. Used as a broadly applied
    food supplement, also. Google is our friend; better than guessing.

    no, it's for people who don't want to, or cannot, consume dairy milk.
    or just for people who like the taste of nut milks. they're pretty
    awesome.

    besides provide extra nutrition?

    it doesn't separate even without the lecithin. the lecithin gives it a
    better texture, more like that of dairy milk.

    good to know even when i was on a *normal diet* I couldn't have milk much
    I'll have to give this a try.

    i find the straining part of the procedure to be a bit of a pain in the
    ass, but i really like the finished product. the first couple of
    batches i made weren't very good but once i got the hang of it i was
    pretty pleased with the results. it's not something everyone will
    enjoy, but i think they're really good.
