1 tablespoon olive oil
2 lbs ground beef or lamb
1 teaspoon salt
1/4 teaspoon pepper
1 medium yellow onion, chopped
1/4 freshly chopped parsley
1/2 cup grated Asiago cheese
1/2 cup tomato sauce
1/2 cup water
1 lb elbow macaroni, cooked
3/4 cup unsalted butter, separated
8 tablespoons flour
4 cups milk
5 egg yolks
In a large skillet add the oil and, over a medium high heat, brown the
meat. Season with salt and pepper. Add the onion, parsley, tomato sauce
and water and simmer until sauce has thickened. Preheat the oven to 350F.
Melt 1/4 cup of the butter. Butter a large baking pan and sprinkle with
half the cheese. Spread the pasta in the pan and drizzle with the melted
butter. Toss to coat. Cover with the meat sauce. In a saucepan melt the
remaining butter. Add the flour and stir until browned. Add the milk and
stir until thickened. Beat in the eggs one at a time. Pour the mixture
over the pasta and bake for 30 minutes.
