Beans?

  1. I was wondering about beans other than green beans. I enjoy bean salad or
    red kidney beans with onions, oil and vinegar. Does this work if you're on
    Atkins plan? Are they low carb?

    Not so much, no. Check their values on fitday.

    I use black soy beans to make bean dishes now. You can buy them canned
    from Eden, and I think some natural food stores will carry them dry in
    bulk. They are very low in carbs.

  4. I second the recommendation for black soybeans. hard to find in a store you
    can find them online. I soak several meals worth of dry beans overnight in
    the frig and pressure cook for 5 minutes, freeze in 1 cup portions, 7 net
    carbs per cup-

    Watch your onion portion also. You can get lower carbs with green onions
    (scallions). Many 3 bean salads are sweet. Splenda or stevia work very well.

    I found conventional boiling didn't soften them- if that's too much
    trouble, get the canned. It put chili back on my menu, a good grab and go
    lunch With a salad

  5. People would say it depends on which part of the Atkins plan you're doing.
    Definitely not during induction. I see people replacing wheat flour with soy
    flour in baking lower carb products, so I guess beans have lower carb than
    cereal but definitely not as low carb as you would need them to be in some cases.

  6. Eden canned black soy beans are only 2g net carbs/cup. Are you saying that
    1 cup of dry uncooked beans has 7g net carbs/cup or after soaking and
    cooking?

  7. I wouldn't use beans in induction. I guess in the 2nd phase they would be
    farther down the road also. I Didn't try them till I Was in my 6th month
    of low carbing.

    I guess. iwas taken back at the 7 carbs I was checking before posting and
    here is why:

    Mature black soybeans are 2 net carbs. If they are green, it is 7 net carbs

    the carb count would change because then its sugar.

    I think maybe its a variety- because the yellow beans have more carbs, and
    are easier to find.

    beans are about the same size and shape as kidney beans. Once they're
    cooked, it's hard to tell the difference from kidney beans.

    They're both oval, but soy beans aren't kidney shaped. And kidney beans

    small size -pea size

  17. both are correct using the USDA database. Search under soybean.
    I've got the latest download version. I think the green soybeans are a
    different variety

  18. The Eden canned black soy beans I get are shaped just like kidney beans,
    not pea shaped, although they are maybe *slightly* smaller. And yes, they
    are Black SOY Beans, not black beans.
