After reading Saffire's soup recipe, it occurred to me that I've never
posted my quickie emergency low carb soup recipe.
This turns out to be surprisingly good and so easy to make it's ridiculous.
TWO SERVINGS:
1 can chicken broth.
2 tbs Stop & Shop medium Salsa (the chunky kind with the very occasional
corn and beans in it.) If you don't like spice, use the "mild" version.
Cut up strips of romaine lettuce
Leftover cooked meat cut into strips.
sliced mushrooms (if you have some on hand)
Boil in a pot on the stove for about 5 minutes and enjoy. A bit of
Parmesan sprinkled on top is nice, too.
This comes out tasting like a spicy vegetable soup. The tomato, beans,
onion and corn from the salsa give it a nice chunky soup texture without
contributing enough carbs to raise my blood sugar at all. It's somewhere
between 3 or 4 per serving. The romaine makes a surprisingly nice soup
vegetable.
