As a fellow lifelong bachelor who can barely cook I sympathize. When I
started Atkins last year I (this is no joke) had to look up on the
Internet how to boil eggs!
I make almost all my own meals and rarely eat out. This is even more
compounded by the fact that I work out of my home.
Here are some simple staples anybody can put together!
My standard breakfast: poached eggs over cottage cheese
This is a good breakfast on low-carb AND low-cal diets. And I find it
staves off hunger for hours.
Poached eggs, it turns out, are trivially easy to make without a poacher.
1. Bring a pot of water to a simmer.
2. Crack the eggs on the side of the pot and let the innards fall into
the simmering water.
You will want to lower the flame a bit because if it comes to a full
boil the white foam will overflow the pot.
Let them simmer for a good 5 minutes. More if you hate runny eggs (I
like them).
Scoop them out with a big spoon with holes in the bottom (I'm sure there
must be a cooking expert name for this utensil) so that the water drains
and plop on top of some cottage cheese. Season to taste and enjoy.
Nutrition count:
3 eggs: 240 cals / 1.8 carbs
200 gm cottage cheese: 214 cals / 3.8 carbs
total: 454 cals / 5.6 carbs
Some other super quick meals:
Hamburgers:
Get 250-300 gm of ground beef
In your hands, create two beef patties from the meat.
Put in a dry fry pan on low heat. Season and heat one side til done.
Turn over, put a slice of cheese on each patty and cook the other side
'til done and the cheese melts.
Add spices, mustard, mayo or low-carb dressing as a sauce.
This is a bit high calorie, but almost no carbs. You just need to count
the small amount of carbs for the cheese and any sauces you put on top.
If you want to save on calories too, substitute ground chicken for the beef.
Grilled chicken breasts:
Incredibly easy to make! Put aluminum foil on top of your grill pan.
Add one or two chicken breasts skin side down. Spice. Put in the oven
and grill (high setting) for 15 minutes.
Remove, turn the breasts over, spice again and return to the oven to
grill for another 15 minutes.
You get delicious, juicy chicken breasts with skin that is crunchy just
right.
While doing the breats I often boil some fresh brocolli in boiling
water at the same time and end up with a very satisfying and healthy low
carb and also low calorie dinner.
Fried chicken:
When you gotta have something fried and want to stick with low carb,
get some of those keto crumbs (or a competing brand). They aren't bad!
And it is really easy to make.
Put an egg into a bowl and beat it.
Add a few strips of boneless breast of chicken.
Put some of the keto crumbs on a plate and put the egg-dripped chicken
into the crumbs, covering it to make a batter.
Preheat a frying pan with some olive oil.
Add the battered chicken breasts to the oil and cook until both sides
are brown. It only takes a few minutes. Very tasty!
And as a bonus: take the left over keto crumbs and mix them into the
left over egg and make a batter. Fry that batter, which rises slightly,
and you have a pancake/bisquit like thing to have as a side dish!
Vegies:
Bags of frozen green beans, spinach and brocolli are your best friends.
