  1. Thought I might as well post the recipe for my low-carb contributions to
    this year's Thanksgiving feast.

    Spinach casserole

    2 10oz packages frozen chopped spinach
    3oz cream cheese
    1/4 cup butter
    1/4 cup parmesan cheese (fresh is better than canned powdery stuff)
    1/2 cup toasted pecans, pine nuts, or walnuts
    salt and pepper to taste

    Cook spinach in salted water, drain. Melt cream cheese and butter together
    and fold in with spinach. Transfer to casserole dish. Top with parmesan and
    nuts. Heat at 350F until cheese on top melts (about 15 minutes).

    (To toast nuts, which gives them a nice browned color and toasty flavor,
    simply heat in a dry pan over medium heat. Turn/stir/flip the nuts often,
    until about 3/4 of them have slightly browned.)
