  1. I cooked an acorn squash last night in my toaster oven (cut in half
    lengthwise). Then, I put butter in the cavity and sprinkled Splenda over
    it. Boy, was that good!

  2. How many servings did you get from the one squash? I looked it up in
    FitDay and one 4-inch acorn squash is 39g net carbs but if you got say 4
    servings out of it, it wouldn't be too bad.

    I don't know how to figure the net carbs out, because all of the acorn
    squashes are different sizes (is that 4 inch size the length or the width?).
    And, it could be that I didn't cut it exactly in half. Then, there was a
    slightly scorched part near the end that I didn't eat. I can tell you that
    I chose a small acorn squash because I didn't know if I would like it with
    Splenda on it. I would estimate the flesh turned out to be maybe a cupful.
    All that beta carotene has got to be worth something!

  6. The "4 inch" would be the width. Not worth the heavy carbs to me for so
    small an amount of finished product, though. :-)

  7. When I looked up acorn squash in FitDay the first time, I chose "raw". Now
    that the OP said it produced about 1 cup after baking, I looked it up again
    and it's not as bad. It comes out to 21g net carbs for 1 cup of baked
    cubes, which is still a little high but acceptable. It's even lower if you
    boil and mash them...only 16g net carbs per cup. :-)
