I have been on a low carb diet for some weeks, but the most difficult
thing is breakfast. What do you eat for breakfast?

I either have my "eggs" or lately 2 fried eggs with 1.5 pieces of Country
Hearth Carb Control Butter Wheat bread toasted with 2 pats butter.
my eggs are like this:
I put a pat of butter into a small non-stick pan and melt. while it is
melting I take 2-3 slices of deli ham (depends on the thickness) roll them
up and slice into thin strips. I toss them into the bottom of the pan. then
I scramble up 2 eggs (if only me. 3 if S4 eats and 4 if S13 eats with me)
I pour them over the ham and cover with a glass cover. I cook/bake them
until light yellow color and then I flip them to firm up the top, flip it
back over and put ~1/8-1/4 cup fresh shredded medium cheddar cheese and then
throw the whole thing under the broiler until the cheese is bubbly. yummy
I will be alternating between the two. and as you can tell, I am home for
breakfast 5 days per week and gone 2.
good luck finding a good breakfast.

Chocolate "souffle" with cream cheese filling! It's a dense souffle.
Dense...like an omelette! But, oh so good.

Looking for something quick? How about a shake? I use low carb soy milk,
hemp oil, a chunk of lite tofu and a scoop of protein mix. Mix it up in the
blender, add some vanilla (or other flavoring) and you're good to go! Beats
the heck out of the old standby, coffee and two muffins.

Flaxseed porridge with berries, now it's getting cold. Fried eggs / bacon /
sausage/ mushrooms/ black pudding (perm any 2/3) if I feel like a change.
Occasionally soy or ricotta pancakes with low-carb syrup.

I eat 3 microwaved sausage links, a few pieces of cheddar cheese and maybe
some egg salad. Or eggs up with any kind of meat.

5 to 6 eggs? damn, isn't that a lot of cholesterol? or do you just eat the
egg whites? I barely eat 2 to 4 eggs a week, let alone a day.. i'm doing
mostly low-fat tho'.

Breakfast doesn't have to be 'breakfast' as you've been led to
believe. I frequently have fish and vegetables for brekky. Or chicken
and salad. Or beef an cauliflower. Sometimes it's leftovers from the
night before - sometimes I cook fresh, sometimes I don't feel like
more than a protein shake with a few strawberries. Also - for many
people breakfast is a chore because they just aren't hungry when they
first get up in the morning. Save it for later and eat when you ARE
hungry!

muffin with low fat cream cheese and smoked salmon (lox). Sometimes in
place of the turkey bacon, we do morningstar sausage links or patties.
Occasionally we have a high fibre cold cereal with skim milk.

Bacon is way too salty for me and I haven't found any sausage without

You can make your own if you do not mind having sausage patties.
Recipes are below.
I cut the salt back on these to 1/4 tsp or sometimes omit it completely
because I am trying to go sodium free due to coronary health issues I am
presently facing.
Also if the bacon is too salty, try soaking it overnight in a pan of water.
The salt gets leeched out that way and in the morning you can drain it and
pan fry as usual with a touch of olive oil of unsalted butter just to keep
it from sticking to the pan (if you are cheap like me and cannot be bothered
to replace an non-stick pan that now sticks a little bit.) It pan frys the
same as unsoaked bacon and will crisp up.
Italian Sausage
1 pound ground pork
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red chili pepper flakes
2 1/2 teaspoon whole fennel seds
2-3 tablespoons water.
Just mix together in a bowl, cover with plastic wrap or foil and
refrigerate a couple of hours or overnight.
To cook - form 6 patties from the meat and pan fry.

Yogurt w/ protein powder. A strive bar if I'm in a rush. Almonds
sometimes. On weekends I used to make an omlette for a sitdown breakfast,
but I never seem to have time anymore. I think tomorrow I'll have some
Gram's Gourmet Cinnamon Pork Rinds. Since I'll be leaving the house right
after I eat, I won't have to worry about portion control which is
sometimes a problem for me with them.
But, really, it can be anything you like that's on plan.

I also get sick of eggs for breakfast, no matter how fancy they are made,
they start staring back at me ....
I often just make a ham and cheese rollup and eat it on the run with some
hot coffee.

I eat low carb breakfast cereals of three varieties, cover them with
ground flax seed and include some cut up melon, strawberries, or, as
in this week, blackberries.
I have found one bowl mixed of the Special K 9 carb(14-5), the Post
Carb Well-9 Carb(14-5) and the Kelloggs All Bran-11 Carb(24-13) with
the ground Flax Seed along with the berries and the low carb Hood
Milk(3-5 carbs) make for a very nice alternative to eggs and amount to
approximately 18-25 carb breakfast(8 or so more if you use the non fat
'regular' milk). I have added some carbs in for ten pieces of fruit
in the cereal.
Special note, the All Bran includes about 50% of the daily fiber
requirement. There are I believe three levels of low carb 'Special
K'-I had the 7 carb version earlier, which my store was out of the
other day. I though I had seen a 9 or 13 one too.
Another bonus is that there is not much fat in this breakfast. You can
do more fat at other meals if that is what is needed.
In any case, it is certainly easier to prepare and clean up!
Just sharing what I do.

The meat market near our home has 'Ground Pork' which I occasionally
buy and add my own seasoning to...pepper, salt, fennel, etc. That way
I can control the taste/tailor it to my liking.
Your market probably has or can do the same.
