The rear wheel of my 2003 Giant TCR2 has started making a loud clicking sound, one click per revolution. It started immediately following a loud clunk as I was just standing on the pedal to take off from stationary following a traffic light change. It is only when I coast; as soon as I start to turn the cranks, even if I'm not keeping up with the wheel, it vanishes and everything sounds normal. When I spin the wheel off the ground I can't hear it. If I'm coasting under about 10km/h, it becomes inaudible; conversely, it's worryingly loud at high speed. The wheel is true and round and not touching anything. The spokes are all intact and all of approximately even tension, although I had to replace one that had snapped in the nipple on the non-drive side a fortnight ago; I retrued the wheel at that time. 105 hub; 32 spoke Mavic CXP-22; generic double butted spokes. Is this some kind of freehub ratchet injury? If so, potentially dangerous? Easy to fix? Could it be from the spokes? (it's not a creak, but a click)

Sounds like a freehub ratchet/pawl injury. I doubt that you can fix it, but you can "easily" replace it without having to take out spokes. You need to have a replacement freehub, pull the axle, 10 mm hex wrench off the "injured" freehub and replace with new.
