Which low-carb plan are you following? Doesn't it give you sample menus?
I also ask because if you are doing Atkins induction, for instance, you are
more limited than after you've passed the first 2 weeks.
Basically, food is good for breakfast, lunch, and supper. 🙂
Breakfast:
1. Eggs over easy on some cottage cheese
2. Sausage or bacon
3. Omelette (Lots of different fantastic kinds)
4. Yogurt
5. Mock Danish (search for the recipe, it's delish!)
6. Anything you would eat for lunch or supper... you don't have to eat
breaksfast food
Lunch or Supper:
1. Tuna or egg salad on celery or cucumber
2. Meatloaf with a side of mashed cauliflower
3. Green salad with chicken strips
4. Pork chops w/ Spagetti squash & alfredo sauce
5. Grilled fish with a side of steamed brocolli & melted cheese
6. You could also have any breakfast food that you like
Some Key advice:
Make sure you are eating enough vegetables (about 3 cups salad veggies/1 cup
hot veggies per day).
Think of the types of food you enjoy now, and ask this group for
substitutes. By substitutes I don't mean frankenfood packaged Low-carb
stuff. I mean like using mashed cauliflower in place of mashed potatoes.
Or using strips of zucchini in place of lasagna noodles to make lasagna. Or
using portabella mushroom caps to make mini pizza's.

Well, the first advice I'd offer is to not think of them as breakfast,
lunch and dinner, but rather "meals". You can eat whatever you want
WHENEVER you want. I sometimes have leftovers from the night before
first thing in the morning. I sometimes have flaxseed/hazelnut cereal
in the evening. I have eggs at any time of the day.
You can find many recipes at atkins.com. Be careful, though, to make
sure that what you want to make really DOES fit in with your plan.

inspiring!

I like to make big batches of things and freeze them. A big pot of
turkey vegetable soup, low-carb lasagna, taco filling, meat suace,
crustless quiche, etc. I usually have a large salad (sometimes with
shrimp, hard boiled egg or other protein) for one meal. I usually have
flaxseed/hazelnut cereal in the morning, but that's for AFTER Induction
(assuming you are doing Atkins).
I've been sticking to basics mostly lately -- I need to take some time
and try some new recipes.

There are several "Low Carb" plans.
Each "Low Carb" plan usually has a book to give the plan and answer your
questions.... and to give you some sample menu and recipes to get started.
IF you don't have a book, you don't have a plan.
Without a plan, you have decreased your chances for success.
Please help yourself... Buy a book about a plan, read it, follow it.

My latest easy lunch idea (borrowed from my brother) is a tin of
kippered herring, eaten either straight, or on a few Wasa rye crackers.
Eat a salad on the side, or slice up some cucumber or some celery.

Brenda, you need to know that diabetics often have a harder time eating
carbs at breakfast than at any other time. This is why you need to buy a
meter, to see how foods affect YOU - everyone is slightly different.
I try to keep breakfast under 6g carb. My favourite at the moment is a mix
of soy protein isolate and flax meal porridge with a few berries; when I get
bored with that, I eat an egg with sausage or bacon, and possibly mushrooms.
Lunch at the moment is low-carb soup (homemade mushroom is good) with a
couple of low-carb crackers, maybe with cheese. I might have a spinach,
bacon and avocado salad instead - yum.
Evening meal I eat with the family, so it's generally some form of protein,
veg, and extra veg for me instead of their carb ration. Cauliflower features
heavily here, it's very versatile, and makes a good substitute for either
potatoes or rice. Tomorrow, for instance, it'll be cacciatori chicken
(thighs cooked in a tomato sauce, with mozarella melted over), string beans,
mashed cauliflower and optional potato wedges!
I also exercise after lunch and supper - usually a walk after lunch, and
weightlifting 3 times a day after supper. Exercise is a magic bullet to keep
your blood sugars lower.
