Hi! What is your favorite way of making broccoli? I'm actually starting to
like broccoli,,but getting tired of having it steamed.
I'm also trying to stay away from cheese or cheese sauces.
Any other ideas? Thanks.

189/178/125I like to take fresh broccoli, peel off the thick skin from the stalks and
chop the tops and stems into manageable pieces, not too small. Then olive
oil & garlic in a big sauce pan - take out the browned garlic - and cook
down the broccoli. You can put a lid on, tilted kind of, ya know? Add salt &
pepper. Let it really cool dowm till it's all soft and yummy. then...OMG -
it's soooo delicious with some lemon squeezed on it.I'm Italian - that's about as precise as I can get with a recipe - LOL! I
had cheese on brocoli once it was pretty nasty :oP~~~~~~~~ -
Thank you,,,,that sounds so good,,,,I will try it tomorrow....

Heat oil in a non-stick fry pan until it just begins to smoke, stir fry the
broccoli until it begins to char in spots.Remove from heat, sprinkle to taste with with some of:
salt or soy or fish sauce
lemon or lime juice or your favorite flavor of vinegar
sesame or well flavored olive oil
fresh ground black pepper, powdered chipotle, cayenne, sriracha, hot sauceServe forth.

I don't use any of the stems, just the crowns and often just the crunchy
little buds sliced off the tips of the crowns.Sauteed in olive oil and butter, not the bulky stems, but the crowns
sliced into bite sized peces. Dill seasoning for variety.Often I will throw in French Onion Dip into the pan in the last minute
or so of cooking, or any other tasty source of fat.Jim

I'm also trying to stay away from cheese or cheese sauces. What about Hollandaise sauce? Here's a decent version you can make in the
blender, though I'd increase the amount of lemon juice a tad:

Or steam it and put on butter and lemon juice.

Any other ideas? Thanks.I steam it, lightly salt it right out of the pot so the salt dissolves
and then I butter it up with room temperature butter YUM!!!!! -

Any other ideas? Thanks.I like it boiled or steamed with a little sesame oil drizzled over it
and a sprinkling of sesame seeds.Or, steam it and then add lemon afterwards - very nice.
It can also be blanched and stir-fried with some garlic.

Any other ideas? Thanks.I'm afraid I do like it steamed with butter, often, and sometimes also
topped with parmesan cheese...but I also like it raw with horseradish,
spicy brown mustard, hummus, red wine vinegar, A1 type steak sauce,
etc. -

water to stop the cooking and then use as you would the raw stuff - on
top of salads, dipped into hummus, etc.Lee

Do you make a low-carb hummus? I have written off the evil chick-pea for
now!! ohhh falafel... :o( Anyway - if you have a LC recipe - please share!Anyone know if tahini is very carby? I make my tahini sauce with tahini,
fresh squeezed lemon & lots -o- garlic, can't remember if that's all? it's
been a while...And that reminds me of babganoush...if I can have tahini I'm making
babaganoush!! Are eggplants high in carbs - phooey.Ya had to mention hummus!

Do you make a low-carb hummus? I have written off the evil chick-pea for

commercially made hummus (and, a cup's a lot, in my opinion) has 35.72
grams of carbs BUT it also has 15 grams of fiber AND 19.75 grams of
protein. That's a power food, in my eyes. Not an induction choice, but
I think there's a place for it in OWL.ohhh falafel... :o( Anyway - if you have a LC recipe - please share!

Tahini has 3.18g of carbs per tablespoon, 1.4 grams of fiber, 2.55
grams of protein. I'd add some to your hummus recipe, but it looks
like hummus, with all the fiber, might be the better LC choice.Quoted message said:
And that reminds me of babganoush...if I can have tahini I'm making
babaganoush!! Are eggplants high in carbs - phooey.Raw eggplant (per cup) has 4.98 grams of carbs, 2.05 grams of fiber
and a negligible amount of protein.Quoted message said:

Sorry - I love the stuff. I don't eat it every day, mind you. But,
once or twice a week, I'll cut up some celery and dip away.Lee
-
I suppose it makes a difference whether the hummus is made from dry
garbanzo/chickpea flour, or from fresh garbanzo/chickpeas, or from boiling
whole dried garbanzo/chickpeas and then draining and crushing them, etc etc?Skinny
