FWIW I can have troubles with eggs myself. For my system I solved the
problem by nuking my scrambled eggs for 2 minutes before eating.

Go to your healthfood store and ask for it. Comes in a smallish box.
Every year, I make a vegan birthday cake for a coworker of mine, so
I've used that egg substitute stuff on several occasions. I've only
used it IN recipes though...I've never tried it just by itself, so I
really can't vouch for it's taste, consistency or egg-likeness.
