  1. It was done in 3 hours! Wow - I was surprised by that.

Anyway - it came out perfect, except...I think it's too much salt. I used
alot of salt plus some soy sauce! I will change the recipe next time for
less sodium but otherwise it is so flavorful and yummy!

also - i ate a bunch of it and feel a bit icky. Does it "rehydrate" in the
    stomach? :-P

yep, I tried the same with dried apples once. It was a real disaster,
gas was almost literally coming out hissing from all holes. I was
lying on bed and could not move. the horrors.

really? it is so tasty though - but after I ate a bunch I had this bloating
feeling in my fingers (I get that after eating too much salt)

In reality it's probably as much salt as in store brands (yikes!)

    Ack! sorry - I can't help laughing!

I am very happy with the results though - and only 3 hours to dry! I'm
amazed! I will definitely do another batch tomorrow and buy more meat too!

Well, maybe, like JC says, try to eat less (of that jerky).

  5. I never put salt on mine, if I am using soy sauce. Cracked pepper, maybe
some minced cheyenne....yum. Curt likes his jerky spicy.

Uh, soy sauce contains *a lot* of sodium -- even the "lite" kind.

Can you give me a mini review of the Wal-mart dehydrator? ARe you happy
with it? do you see any obvious limitations of that $40 unit over some of
the other brands? I'm thinking of getting one. Thanks.

Could you please give us your recipe and procedure? Also what kind
    of dehydrator you are using.
    Thanks

    Hi Irv-

I just bought the Nesco Snackmaster Express at WalMart for $40. I am very
happy so far. I made fruit leather from cinnamon applesauce and a big batch
    of jerky.

I read some different recipes and just made up my own version in the end. I
used lean top round, which was on sale at stop n' shop, and cut thin slices
with the grain. then i put it all in a big ziploc bag with worcestershire
sauce, soy sauce, garlic powder, black pepper and a little ginger powder. I
added too much additional salt which I thought was neccessary for curing. I
will add less next time. I had read to add 1 tsp per lb of meat but i added
an extra (for good luck?) and also had the soy sauce which is very salty.
It only took about 3 hours to dry and the machine was very easy to clean and
a little quieter than my microwave. meaing you can't hear it if you aren't
    in the kitchen.

As far as amounts, i don't thnk it matters, add as much garlic or pepper as
you think you like (haha - i'm italian, that's how we cook!)

    good luck

    Hi -

I haven't used other brands and I'm only in the Dehydrating Arena for about
24 hours but I did do my research and found this one very highly rated among
the users. So far I am thrilled with it, and I was expecting to be
disappointed. I was able to put enough meat in it to make about a pound of
jerky (i put in 2.5 lbs ) So the hole in the middle and round shape wasn't a
prob, i thought it would be. Also , it was quiet, cleaned up easily and was
    so simple to use!

The main reason I went for it was the reviews but what really sold me on
this over the other round dehydrators on the market is the fact that the fan
and heater are on top and not exposed. No mess there. Others have it on the
bottom and i think it gets messy and doesn't dry evenly. I still can't
believe it only took 3 hrs! I was expecting 8-10!!! It also seems to dry
very evenly. I thought I should rotate the trays just in case but I don't
think I needed to. The bottom trays seemed as dry as the top trays.

I hope this is helpful, all I can say is I am very pleased and the jerky
turned out beautifully - just delicious!! For $40 it's a great intro into
dehydrating, I think I will be able to do everything I want to with this
machine and it isn't even bulky. i have it on top of my microwave.

If you want to spend $100+ look at the Excalibur, I think it's the next
level. it's square shaped and fan/heat from back and you can remove trays to
dry tall items like a whole apple. looks like a great machine.

Thanks! I'm off to Walmart in the morning. I don't know if they
have the Nesco up here in the northern wilds, but I'll get something.
I can never have too much gralic or pepper!

Thanks, Drop. That is a great review. I'm going with the $40 unit because
I don't wanna spend a lot of money right now and I'm not sure how much I
plan to use it anyway. But having some no sugar, no msg jerky would be
    nice.

A good idea. I have a very basic walmart unit that is like 6-7 years
old (not sure) and that works great. No thermostat, even.

Soy sauce typically does contain MSG, in added or natural form.

Here's a simple rule. If your spice or sauce makes food tastier (as
opposed to simply adding a desired flavor), it contains MSG. It
    usually is correct.

MSG or its equivalents are often labeled as "hydrolyzed vegetable
    protein" or "calcium caseinate" etc.

I personally am not MSG sensitive, and I eat MSG, but I try not to go
    crazy on it.

Yeah, I'm MSG sensitive, but it depends on the dose. Foods in that list
that always contain MSG usually are a problem for me, while foods in teh
    sometimes list may not.

Yup. Been there, done that. Eating too much jerky at once
carries its own punishment. Jerky must be eaten slowly.
