Quiche recipe?

  1. Hi -

    I had nothing in the house for lunch (that appealed to me) so I threw
    everything from the fridge into a ramikin and called it Quiche. It's still
    baking so I don't know the results of the experiment yet!

    I used 4 eggs, about 1/3 -1/2 cup grated white cheddar, abot 1/2 cup chopped
    spinach (was frozen), a splash of milk - probably a few tablespoons &
    salt, pepper and a little garlic powder.

    I will broil it a little when it looks "firm".

    Anyone have a realllllly good quiche recipe to share? I had a delicious one
    with asparagus & ham, it was peppery and soooo good I ate the whole 10"
    thing! That was in my crust-eating days though!

    I would just google some recipes but I wanted the opinion of someone who
    actually tried it - Thanks-

  2. Low Carb Breakfast Quiche Muffins

    12 Muffin Pan

    12 Bacon Slices, cooked

    12 Eggs

    3/4 cup Half & Half

    Parmesan Cheese, grated

    Salt, Pepper and other seasonings, to taste

    Preheat oven to 350 degrees F.

    Mix eggs, Half & Half and seasonings and set aside

    Spray muffin pan with cooking spray

    Place one slice of cooked bacon in the bottom of each muffin space

    Fill each muffin space 3/4 full with egg mixture

    Top each space with grated parmesan cheese

    Bake for 7-10 minutes, or until egg mixture is fully cooked.

    1/2 cup of mayonnaise
    1 tbsp of corn starch
    3 eggs
    1 cup finely chopped onion
    1 cup shredded cheese (jack, cheddar, swiss, etc.)
    1 cup cooked and chopped meat (sausage, bacon, chorizo, etc)
    salt and pepper to taste ( I use 1/2 tsp of cheyenne)

    Bake at 325 for 40 - 45 minutes.

    So, make it without the pie shell, just grease the dish with a
    little shortening.

    Stir in spinach.

    Bake uncovered @ 400 degrees for 15 minutes.
    Then lower temperature to 350 degrees and bake another 30 minutes.
    Cool 10 minutes before slicing.

    This is my sis-in-law's recipe. I've posted it here on and off
    for years, and it usually gets rave reviews.

    I wouldn't want to heat up my oven this time of year, because the
    AC is getting old and tired, but I make it a lot in the winter.
    A doubled recipe works nicely in a 9 x 13 pan as a holiday side dish.

    Janine's Spinach Pie

    blend together
    3 jumbo or 4 large eggs
    3 ounces softened cream cheese
    1/2 tsp salt
    add and mix well
    1 cup grated cheddar cheese
    1 10 ounce pkg frozen chopped spinach, thawed, well drained
    1/4 cup chopped scallion (green onion)
    2 Tbsp dried or 4 Tbsp fresh chopped parsley

    Pour into a non-stick-sprayed casserole (or unbaked pie shell)
    Top with
    thin slices of fresh tomato and
    1/4 cup grated parmesan cheese

    Bake at 450 for about 35 minutes
