Thanks muchly for helping to alleviate my fears on spinach overdose. I find that I usually get into food habits, the variety of my diet is limited for a few weeks. Partly because I buy in bulk to save money, and partly because I don't like to think about food all the time. So if I have easy stuff at hand I don't have to come up with recipes or plan ahead or stuff like that, behavior which for me leads down a road to obsession.
So, lately my diet has been leaning towards eggs and spinach. Sometimes scrambled eggs with cheese, but usually just hard boiled. Sometimes I add cheese to the spinach, but it's usually just stir fried with some butter, salt and basil. Or I'll have a spinach and tomato salad. Seems I eat spinach and eggs every day, which is not such a bad thing since between them they have significant quantities of almost all the vitamins and minerals. I could almost live off of just eggs and spinach. As it is they are the "base" for nearly every meal I eat now.
