Um, it seems that's what she is already working on, as we speak. That's
why she posted to this group.
I know many people who can barely flip a pancake and yet they manage to
feed their children and husband just fine. And she doesn't have zero
cooking skills, she has enough skills to be able to read and follow
recipes, given that she asked for recipes and ideas.
There are a myriad of foods (not necessarily low-carb) that require
little to no preparation and are still healthy, so the "not being able
to cook" bit really is irrelevant.
The difference is now she is newly on a low-carb diet and is seeking for
ideas that are different than what she is used to. That's what people
do, they ask.

You've nailed it on the head. I can whip up all sorts of lovely carb
laden dishes like I grew up on, but I guess when it comes to the basics
of low-carb foods I'm a little lost. We've done the low-carb thing
before but we always had problems because of the lack of variety at the
time.
I haven't quite gotten the hang of getting everything done that I used
to with an infant around the house, so for the last several months I've
been resorting to convenience foods when I'm at home by myself. If he
starts crying when I'm in the middle of cooking, do I let him cry or let
the food burn? I'd rather not deal with it. I know there are thousands
of mothers out there that don't have a problem with things like that,
but sadly I'm not one of them (I think I missed the June Cleaver gene).
Going back to this particular post, I never really had eggs growing up
(Dad was on all the various low-fat, low-sodium diets), so I have zero
experience with egg dishes. LOL I never realized you could freeze them
with edible results until I noticed all the frozen scrambled egg
products in the grocery store.
