No. Also, that specific model is notoriously unreliable. They relied
on 5 teeeensy little tabs to keep the index unit from rotating on the
shifter boss, and over time these tabs bust off, leading to very poor,
unreliable shifting.
This problem is unique to the 6-speed 600EX shift lever, doesn't affect
any other Shimano model.

The indexing won't be perfect, but should be workable with a bit of fiddling

They should work about as well as the 8-speed down-tube levers.
You can get actual 7-speed brifters, the Sora model (my favorite in the
Shimano line.) These will work perfectly with your setup.

That's a non-issue, your freewheel is compatible with all 7-speed indexing.
