For the last website, you can also buy topographical maps (I purchased mine from a camping store), that show majority of the trails (eg fire trails). They are published by a NSW State Govt. Dept (The Land and Environment?).
Also be aware that riding in National Parks may be restricted, especially on WALKING TRACKS only. You can look at this through there website. They list all of the national parks and which ones you are allowed to ride on.
You can also type in Lane Cove in Google.com.au for some other rides.

good advice from whackyscientist. from what i know, St Ives has a good range of trails. Also in warringah in and around manly dam. i ride the quarry trail in hornsby which links up with the great north walk (ie walking trail) and have to turn around and come back 2 hours of steep climbs.
