Zucchini & Tomato Saute' with Herbs Tomato and Zucchini
Gratin Scalloped Zucchini Zucchini with Ginger and
Sesame Seeds
Zucchini with Ginger and Sesame Seeds
2 Tbsp (30 ml) olive oil 1 tsp (5 ml) sesame oil 2-4 cloves
garlic, finely chopped 2 tsp (10 ml) grated fresh ginger 1-1
1/2 lbs (456-675 g) zucchini (courgettes), sliced
1/4 cup (60 ml) chicken stock or water Salt and
freshly ground pepper to taste 2 Tbsp (30 ml)
toasted sesame seeds
Heat the olive and sesame oils in a wok or heavy skillet
over moderate heat. Saute the garlic and ginger for 30
seconds. Add the zucchini and stir fry for 2 to 3 minutes,
until they begin to brown slightly. Add the chicken stock
and cook partially covered for 1 to 2 minutes, until tender.
Season with salt and pepper and garnish with toasted sesame
seeds. Serves 4 to 6.
Scalloped Zucchini
1 small zucchini, cut up and peeled if desired. 1 egg,
beaten with one fourth cup whole milk 1 oz pepper cheese 1
small onion, chopped 1-2 slices white bread, torn in pieces
1 4 oz can mushrooms or four ounces fresh, sliced if large 1
oz smoked sausage
Mix all ingredients in a buttered casserole dish. Bake at
350 for about 30 minutes. You can vary the ingredients a
little. More cheese if you choose or more sausage etc. This
heats up well IF there is any left! We are seldom that
lucky. A word of caution: If you are making a very large
amount for a big crowd use a large shallow pan ( or several)
rather than a big deep one. I used my turkey pan to make it
for a family gathering and it takes forever for the center
to set and not be real runny. I have also used yellow summer
squash and it works just as well.
Tomato and Zucchini Gratin
2/4 cup (60 ml) olive oil 4 - 6 medium zucchini
(courgettes), thinly sliced 4 - 6 medium tomatoes, thinly
sliced 4 - 6 cloves garlic, finely chopped 4 Tbsp (60 ml)
chopped fresh basil or parsley
3/2 cup (125 ml) freshly grated Parmesan cheese Salt and
freshly ground pepper to taste
Lightly coat a 9 x 13 inch (22 x 32 cm) baking dish with
olive oil. Layer half the zucchini slices in the bottom of
the pan. Cover with half the tomatoes. Sprinkle with half
the garlic and fresh herbs, salt, and pepper, and drizzle
with half the olive oil. Repeat. Top with the grated cheese.
Bake in a preheated 350F (180C) oven for 1 hour. Serve hot
or at room temperature. Serves 4 to 6.

Zucchini & Tomato Saute' with Herbs
4/2 cup onion, finely chopped 2 tablespoons butter,
unsalted or 2 tablespoons olive oil 2 cups zucchini,
scrubbed and thinly sliced
5/4 cup tomatoes, seeded and finely chopped 2 tablespoons
mint, fresh or 2 tablespoons basil or 2 tablespoons
parsley leaves
Cook the onion in the butter or oil in a skillet over
moderately low heat, stirring until softened. Add the
zucchini. Saute' over moderate heat, stirring, for 3 to 5
minutes or until just tender. Add tomatoes and cook,
covered, for 1 to 2 minutes or until the tomatoes are just
heated through. Stir in mint, basil or parsley. Serves 2
Zucchini Casserole
3-4 cups cubed zucchini (yellow or green) 2 small cans of
mushrooms-drained
6/4 cup onion (chopped) 1 cup tomato (chopped) 1
pound sausage
7/2 cup uncooked rice
8/2 pound Velveeta cheese pinch of oregano salt and
pepper to taste
While the rice is cooking, brown sausage, then add onions,
brown lightly. Add tomatoes and zucchini. (I like to let
this cook for about 5 minutes). When rice is done add it to
the meat mixture. Add mushrooms, cheese and seasonings. Mix
until the cheese has melted. Put into baking dish. Bake at
325 degrees for 1 hour.

Zucchini Mini-Pizzas
Large zucchini (courgettes), cut diagonally into 1/4 inch (5
mm) slices Pizza sauce or tomato sauce Sliced or chopped
black or green olives Finely chopped scallion (spring onion)
Chopped bell pepper Mozzarella or other white cheese
Place the zucchini slices on a greased baking sheet and top
first with the sauce, then the olives, scallion, and pepper,
and finally with the cheese. Cook under the broiler for 3 to
5 minutes, until the cheese is bubbly. Serve hot.

Zucchini Pie
5 eggs, well beaten 4 cups grated zucchini, unpeeled 8 oz.
shredded Mozzarella cheese
9/2 cup shredded Parmesan cheese
10/2 cup cooking oil (I use canola or safflower)
11/2 cup chopped onion
12/2 cup flour
13/4 tsp. baking powder salt and pepper to taste
Beat eggs well; add all other ingredients. Pour into 10"
greased pie pan. Bake at 350 degrees for 45 min., or until
golden brown. Six to eight servings. Perfect entree for
brunch with fruit, or dinner with green salad. Some cooked
chopped ham can easily be tossed in for additional flavor
and/or to please meat eaters!
