Enjoyed an easy dinner last for four --- Stuffed cabbage leaves using a
ground lamb and italian seasonings, baked in a little beef stock with a
homemade fresh tomato sauce spooned over.
I googled here and found a potato and mushroom gratin as I had a
surfeit of mushies here. It was a tasty accompaniment, plus some sweet
steamed carrot slices.
Dessert I made up, using a Gary Rhodes (UK) idea of poached eigths of
sweet eating apple in apple cider. Removed apples when tender and
reduced cider with a handful of dried cranberries, and a little honey
to a syrup.
Baked eight oblong pieces of ready-rolled puff pastry to golden.
Plated one on each plate, 4 apple wedges on top, cranberries and syrup,
then a spoonful of vanilla whipped cream. Topped with a second pastry
and dusted with confectionery sugar. Garnished with a mint sprig.
The apples were a real intense flavour and delicious!
