I bought a used bike with XT disc brakes. When I removed the wheels, the brake calipers closed in and made it impossible to put the wheels back on.. The only thing I could see to do was to open the bleed valve and manually push against the pistons, forcing some oil out and getting the pistons to stay in the retracted position. Only problem now is, I have no brakes at all. My question is, if I put more oil , how do I prevent this from reoccuring? Also, any ideas what caused this? Is this normal? TIA.

Go through the service page from Shimano at URL: http://bike.shimano.com/product_images/BR/si_images/BR-M755.pdf The problem you originally experienced isn't "normal". If the above procedures don't work, you will need to get it to an experienced shop to trouble shoot and remedy.
the brake pads don't close in on their own - the brake lever must be being activated in some way for that to happen.
fixing it is no big deal - simply slide a blade between the pads and force them [gently] apart again. no bleeding required.
re; your earlier adjustment question, there is a small hex screw on the inside face of the lever between the lever & bar.
